Lupin, cinnamon and coconut granola

Makes roughly ½ litre container

Ingredients

1 cup Lupin Flakes
1 cup puffed millet
½ cup shredded coconut
¼ cup pepitas
¼ cup sunflower seeds
4 tsp ground cinnamon
¼ cup rice malt syrup
3 tbsp coconut oil
¼ cup goji berries (optional)

Method
  1. Preheat oven to 160°C
  2. In a bowl toss all the ingredients until well mixed and evenly coated
  3. Transfer the mix to a baking tray lined with baking paper
  4. Roast, tossing occasionally, until golden brown.  Depending on oven allow 15 – 20 minutes baking time
  5. Leave granola to rest on the baking tray while it cools, this will allow it to dry out and crisp up
  6. Once cool, add raw goji berries and mix to combine

Serve:
Sprinkled on top of Greek yoghurt with fresh fruit of choice
