Lupin bircher muesli

Serves 2


⅓ cup toasted Lupin Flakes (refer to
pack for toasting instructions)
1 tsp chia seeds
1 tsp shredded coconut
1 tsp cinnamon
½ cup water
⅓ cup Vaalia vanilla yoghurt
1 small apple, grated

  1. Place toasted Lupin Flakes, chia, coconut, cinnamon and grated apple in a large bowl.
  2. Add water and yogurt and stir well to combine.
  3. Cover bowl and refrigerate for at least 2 hours or overnight.
  4. Serve lupin bircher muesli with extra yogurt and fresh berries.

Recipe note:

We suggest using Vaalia vanilla yogurt due to its high probiotic count and slight sweetness.
You can use a different yogurt and it won’t affect the recipe – you may just like to add a little honey or sweetener of choice before refrigerating!
