These might be the best little lemon cheesecakes I’ve ever made! 🍋A buttery, delicious shortbread base topped with smooth, creamy baked cheesecake that’s bursting with lemon flavour. Add fresh berries on top, and every bite is bright, rich and absolutely irresistible.
Preheat the oven to 170°C conventional or 150°C fan-forced. Line a 12-hole muffin tin with paper cases.
Combine the plain flour, lupin flour, icing sugar and salt. Add the melted butter and vanilla, then mix until a soft, crumbly dough forms.
Divide the mixture evenly among the paper cases—approximately one heaped tablespoon in each. Press down firmly to create an even base.
Bake for 10 - 15 minutes, until lightly golden around the edges. Once baked remove from oven & reduce the temperature to 160°C conventional or 140°C fan-forced.
Beat the cream cheese and caster sugar until smooth. Add the yoghurt, egg, lemon zest, lemon juice and vanilla, mixing only until combined. Divide the filling evenly among the cases.
Bake for 15–18 minutes, until the edges are set but the centres still have a slight wobble. Turn off the oven, leave the door slightly open and allow the cheesecakes to rest inside for 10 minutes.
Cool completely, then refrigerate for at least 2 hours before decorating with berries and lemon zest.
Notes
Cook’s tip: Don’t overbeat the filling after adding the egg, as incorporating too much air can cause the cheesecakes to rise and crack. The shortbread bases will initially feel slightly soft but will firm beautifully as they cool.
