This is a delicious savoury lunch favourite, made easy using the Lupin pre-pack crumb mix, highlighting that this Lupin Lemon crumb mix can be use in many other ways, other than just crumbing chicken!
¾cupprotein reduced-fat cottage cheeseor thick reduced-fat high protein yoghurt
½cupreduced-fat grated tasty cheese
1tspmixed dried herbs
Salt & cracked black pepperto taste
Instructions
Crust
Preheat oven to 180°C.
In a bowl, combine lupin crumb mix, egg, water and oil. Mix until the texture resembles damp sand and holds together when pressed.
Press mixture firmly into a lightly sprayed quiche or tart tin, (see notes) covering the base and slightly up the sides.
Blind bake for 10–12 minutes, until lightly golden and set. Remove from oven while you make the filling.
Filling
In a bowl, whisk eggs, cottage cheese (or yoghurt), milk, salt, pepper and herbs until mostly smooth, add ham, finely diced onion and cheese, whisk again.
Pour the egg mixture over the base.
Bake for 30 minutes, or until just set. Rest for 10-15 minutes before slicing for clean cuts.
Notes
Quiche or Tart Tin with removable base. 28-30cm will yield a classic thickness, that sets beautifully, ideally with 3–4 cm depth.
