Healthier Mac & Cheese Bake with Lemon Pepper Crunch

lemon pepper lupin crumbing mix

Instructions
Bring a large pot of water to the boil, season with salt, add the lupin pasta, cook for 3-5 minutes. Drain and let cool.
250 g lupin pasta
In the meantime, Brown off the bacon and onion and let cool.
200 g bacon,
1 small onion
Beat eggs together, and once mixes are cooled, add everything together, mix and spoon into a baking dish.
100 g mozzarella,
2 tbsp grated Parmesan cheese,
150 g yoghurt,
3 eggs,
1 tbsp fresh parsley,
Salt & pepper
To a small bowl add the lupin crumbs & Parmesan, mix together, then top the pasta mix with the lemon pepper crumb evenly over the top.
1/3 cup lemon pepper lupin crumbing mix,
1 tbsp Parmesan
Spray with olive oil, cover and bake at 180°C for 30 mins.
Uncover and bake or grill for another 10 minutes or until golden and crispy.
