Line a 20cm square slice tin with baking paper, allowing the paper to extend over the sides.
Place the milk chocolate, dark chocolate and coconut oil in a microwave-safe bowl.
Microwave in 30-second bursts, stirring between each burst, until melted and smooth.
Reserve a few marshmallows, raspberry lollies , cranberries & flaked coconut for decorating the top.
Add the lupin flakes, remaining marshmallows, raspberry lollies, cranberries and shredded coconut to the melted chocolate. Gently fold until everything is evenly coated.
Transfer the mixture to the prepared tin and spread it out evenly.
Scatter the reserved marshmallows, raspberry lollies, cranberries & flaked coconut over the top, pressing them gently into the chocolate.
Refrigerate for approximately 1 hour or until completely firm.
Remove from the tin and cut into 16 pieces.
Notes
Cook’s tip: Allow the rocky road to stand at room temperature for about 5 minutes before slicing. This will make it easier to cut and help prevent the chocolate from cracking. Store in an airtight container in the refrigerator.
