In a microwave-safe jug, add the lupin flakes and boiling water. Microwave on high for 3 minutes. Remove and fluff with a fork. Set aside to cool slightly.
In a large bowl, combine the cherry tomatoes, cucumber, celery, apple, sultanas, sunflower seeds, chicken, and parsley. Add the cooked lupin flakes.
In a small bowl, whisk together the yogurt, Dijon mustard, honey, salt, and pepper until smooth. Pour the dressing over the salad and toss gently until well coated.
