High Protein Flour – Bread Flour Alternative
Australian Sweet Lupin (ASL) Flour can be used in lots of uses – baking, making hummus/dips, beverages/smoothies, pancakes…you name it and you can use this flour as a very high protein kitchen essential, with over 40% protein and less than 4% digestible carbohydrate. All of our Lupins are from the species, Lupinus angustifolius which is a very different species to bitter (Alkaloids) tasting South American and some European lupin species. Our flour is milled from the endosperm, the yellow meal inside the husk of the lupin after the husk has been removed. So this is a high value, natural protein. Our process is purely mechanical and operates at a temperature of less than 36C, preserving the full value of the protein – cool temperature, dry processing so the protein is totally available and you get the full value … as if you picked the bean straight off the plant.

So far, really good. I’ve made some Lupin crispbread with it. It turned out great. I’ll be making lots more. The only flour in it is Lupin!! Then, you add salt, spices and oil, and top it with some seeds – sesame and nigella were great, although I’ll probably mix the seeds through next time. Then I cooked it, and later dried it in the oven to get it crispy. It’s soo good – especially no other flour but Lupin flour!! I’m stoked. I’ll probably cook it in a rectangle tin next time and cut it into squares.
I also made a couple of other breads with a mix of Lupin and Almond flours. I also dried them after cooking them. They are great too! Overall, a winner for me.

I LOVE The Lupin Co Lupin flour and thoroughly recommend.
I only use the Australian Lupin flours, and won’t use the bitter lupin beans or flours. I have found TLC flour brand goes a bit further than another Australian Lupin flour brand and was slightly more absorbent than the other brand for the same weight. When using any brand, just adjust the liquid in recipes to the same mix consistency you expect of other Lupin flour recipes. TLC have examples of recipes here on website to help (good Lupin flour recipes can be hard to find on the internet, but you can adapt these to your own needs with trial and error), but generally you would mix Lupin flours along with other flours when baking. I prefer healthy, Keto/Low Carb and Gluten free foods, and use TLC Lupin flour most often in my breads, muffins etc, but also use in other cooking, and end up eating almost every day. (This freezes well too).

Sock of keto with no crunch? So was I, and with Xmas coming, I want to make christmassy foids without compromising my eating plan which has made me so much healthier. This flour is like the holy grail, better than coconut flour in how it bakes, better than almond flour for crunch. Add half and half with almond meal for a pastry that makes me feel I didnt compromise at all. Now to attempt liw carb mince tarts! Then pizza base. Oh, and a shortbread… so many adventures ahead.

Trouble with low carb cooking… so few good binders! Meatballs fall apart or are too tight with a gum, or taste yuck with flaxseed. And schnitzels…. dont bother. Lupin flakes make my meatballs perfect again and I can now enjoy a crunchy schnitzel. woop! No weird tastes, just better food.

I bought this to use with a keto diet. Am still getting to know how the flour works in cooking/baking, and have used it (+ flakes) to make crumbed chicken wings so far. It worked pretty well, but is much more dense than wheat, so will need to tweak ingredients to try and lighten a little – I think I’ll try this with pork rind next time. It browned very well in the oven, and the texture was quite close to breadcrumbs, just a little heavier.
Am looking forward to trying this out in keto breads.

I am excited to do my baking with this high protein gluten free flour, however there aren’t many recipes I can find online that would work as a substitute with the similar results on other flours. One thing though I find that Lupin flour adds crispy texture to the tortilla chips I made, it’s fantastic!

Second purchase of Lupin flour. Appreciate the availability of an alternative flour that is almost no carb and full of good nutrition. Teams well with oat fibre, almond flour, and coconut flour. In addition to the great recipes from the Lupin Co; searching the internet has yielded a variety of Vegan keto recipes using Lupin. The 5kg pack is fantastic. I portion into 1kg lots and freeze. When using a portion, I keep wrapped, and store in an airtight container in the fridge.
