Healthier Mac & Cheese Bake with Lemon Pepper Crunch
An Easy Quick Comfort Food meal, that’s High protein, deliciously cheesy, packed full of flavour, and that crunchy top is EVERYTHING.
Ingredients
Bake
- 250 g lupin pasta
- 100 g mozzarella shredded
- 200 g bacon shortcut - fat cut off
- 1 small onion finely diced
- 2 tbsp grated Parmesan cheese
- 150 g yoghurt 99% fat-free plain
- 3 eggs
- 1 tbsp fresh parsley chopped
- Salt & pepper
Crunchy topping
- 1/3 cup lemon pepper lupin crumbing mix
- 1 tbsp Parmesan
- light spray olive oil
Instructions
- Bring a large pot of water to the boil, season with salt, add the lupin pasta, cook for 3-5 minutes. Drain and let cool.250 g lupin pasta
- In the meantime, Brown off the bacon and onion and let cool.200 g bacon, 1 small onion
- Beat eggs together, and once mixes are cooled, add everything together, mix and spoon into a baking dish.100 g mozzarella, 2 tbsp grated Parmesan cheese, 150 g yoghurt, 3 eggs, 1 tbsp fresh parsley, Salt & pepper
- To a small bowl add the lupin crumbs & Parmesan, mix together, then top the pasta mix with the lemon pepper crumb evenly over the top.1/3 cup lemon pepper lupin crumbing mix, 1 tbsp Parmesan
- Spray with olive oil, cover and bake at 180°C for 30 mins.
- Uncover and bake or grill for another 10 minutes or until golden and crispy.light spray olive oil
