Ingredients

  • 200 g milk chocolate roughly chopped (1¼ cups)
  • 200 g dark chocolate roughly chopped (1¼ cups)
  • 1 tablespoon coconut oil
  • ¾ cup 60g lupin flakes
  • cups 75g mini marshmallows
  • ¾ cup 110g raspberry lollies, halved
  • ½ cup 70g dried cranberries
  • cup 30g shredded coconut
  • 10 gms flaked coconut for the top

Instructions

  • Method
  • Line a 20cm square slice tin with baking paper, allowing the paper to extend over the sides.
  • Place the milk chocolate, dark chocolate and coconut oil in a microwave-safe bowl.
  • Microwave in 30-second bursts, stirring between each burst, until melted and smooth.
  • Reserve a few marshmallows, raspberry lollies , cranberries & flaked coconut for decorating the top.
  • Add the lupin flakes, remaining marshmallows, raspberry lollies, cranberries and shredded coconut to the melted chocolate. Gently fold until everything is evenly coated.
  • Transfer the mixture to the prepared tin and spread it out evenly.
  • Scatter the reserved marshmallows, raspberry lollies, cranberries & flaked coconut over the top, pressing them gently into the chocolate.
  • Refrigerate for approximately 1 hour or until completely firm.
  • Remove from the tin and cut into 16 pieces.

Notes

Cook’s tip: Allow the rocky road to stand at room temperature for about 5 minutes before slicing. This will make it easier to cut and help prevent the chocolate from cracking. Store in an airtight container in the refrigerator.
