Ham & Cheese Quiche
This is a delicious savoury lunch favourite, made easy using the Lupin pre-pack crumb mix, highlighting that this Lupin Lemon crumb mix can be use in many other ways, other than just crumbing chicken!

Ingredients
Crust
- 1½ cups lupin crumb mix with Lemon
- 1 whole egg
- 1½ tbsp olive oil or melted light butter
- 2 tbsp cold water
Filling
- 100 g shaved ham chopped
- 1 small red or brown onion finely diced
- 6 large eggs or 5 Jumbo eggs
- ¾ cup protein reduced-fat cottage cheese or thick reduced-fat high protein yoghurt
- ½ cup reduced-fat grated tasty cheese
- 1 tsp mixed dried herbs
- Salt & cracked black pepper to taste
Instructions
Crust
- Preheat oven to 180°C.
- In a bowl, combine lupin crumb mix, egg, water and oil. Mix until the texture resembles damp sand and holds together when pressed.
- Press mixture firmly into a lightly sprayed quiche or tart tin, (see notes) covering the base and slightly up the sides.
- Blind bake for 10–12 minutes, until lightly golden and set. Remove from oven while you make the filling.
Filling
- In a bowl, whisk eggs, cottage cheese (or yoghurt), milk, salt, pepper and herbs until mostly smooth, add ham, finely diced onion and cheese, whisk again.
- Pour the egg mixture over the base.
- Bake for 30 minutes, or until just set. Rest for 10-15 minutes before slicing for clean cuts.
Notes
Quiche or Tart Tin with removable base.
28-30cm will yield a classic thickness, that sets beautifully, ideally with 3–4 cm depth.
