As we are heading into the Christmas Season, we start to think about what we are making, serving our guests or gifting home made bakes. These Snow Balls are A Delightful Light, tangy and melt-in-your-mouth festive treat to eat or to gift.

Ingredients
  

  • ½ cup lupin flour
  • ½ cup almond meal
  • ½ cup desiccated coconut plus extra for rolling
  • 1 Large Lemon - Zest
  • 2 tbsp lemon juice
  • 2 tbsp maple syrup
  • 1 tbsp melted coconut oil you may need a little more.
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • In a bowl, mix lupin flour, almond meal, coconut, and lemon zest.
  • Add lemon juice, maple syrup, coconut oil, and vanilla. Mix well — the mixture should be soft but not sticky.
  • Roll into small balls (about 1 tbsp each).
  • Roll each ball in extra coconut.
  • Chill in the fridge for at least 30 minutes before serving.

Notes

Store: Airtight container in the fridge for up to 1 week.
