Lupin, Haloumi and Sweet Potato Cakes

Ingredients
  

  • 150 g Lupin Flakes
  • 250 g haloumi cheese grated
  • 30 g parmesan grated
  • 250 g sweet potato grated
  • ½ onion large - finely diced
  • 120 g corn kernels
  • 50 g plain flour or Gluten-free plain flour
  • 1 egg lightly whisked
  • 4 cloves garlic crushed
  • 60 ml milk or water or stock
  • 25 ml oil
  • Salt and pepper to taste
  • parsley Handful
  • Oil Oil of choice for shallow frying

Instructions
 

  • Mix all ingredients until well combined. Let stand for 5 minutes.
  • Once rested, with moist hands, form the mixture into patties/ burgers of desired size. We recommend creating 80g portions and making them as thin as possible to allow for even cooking.
  • Shallow fry until golden. Ensure your oil is very hot before adding patties.
  • Alternatively you can lightly spray patties with oil and bake in a low to moderate oven for about 30 mins for an even healthier mini burger!

Notes

Serving suggestion:
Serve with plain Greek yoghurt, sauce or relish of your choice.
