Lupin, Cinnamon and Coconut Granola

Ingredients
  

  • 1 cup Lupin Flakes
  • 1 cup puffed millet
  • ½ cup shredded coconut
  • ¼ cup pepitas
  • ¼ cup sunflower seeds
  • 4 tsp ground cinnamon
  • ¼ cup rice malt syrup
  • 3 tbsp coconut oil
  • ¼ cup goji berries optional

Instructions
 

  • Preheat oven to 160°C
  • In a bowl toss all the ingredients until well mixed and evenly coated
  • Transfer the mix to a baking tray lined with baking paper
  • Roast, tossing occasionally, until golden brown. Depending on oven allow 15 – 20 minutes baking time
  • Leave granola to rest on the baking tray while it cools, this will allow it to dry out and crisp up
  • Once cool, add raw goji berries and mix to combine

Notes

Sprinkled on top of Greek yoghurt with fresh fruit of choice
