Lupin, Cinnamon and Coconut Granola
Makes roughly ½ litre container
Ingredients
- 1 cup Lupin Flakes
- 1 cup puffed millet
- ½ cup shredded coconut
- ¼ cup pepitas
- ¼ cup sunflower seeds
- 4 tsp ground cinnamon
- ¼ cup rice malt syrup
- 3 tbsp coconut oil
- ¼ cup goji berries optional
Instructions
- Preheat oven to 160°C
- In a bowl toss all the ingredients until well mixed and evenly coated
- Transfer the mix to a baking tray lined with baking paper
- Roast, tossing occasionally, until golden brown. Depending on oven allow 15 – 20 minutes baking time
- Leave granola to rest on the baking tray while it cools, this will allow it to dry out and crisp up
- Once cool, add raw goji berries and mix to combine

Sprinkled on top of Greek yoghurt with fresh fruit of choice
