Lupin, Haloumi and Sweet Potato Cakes
Ingredients
- 150 g Lupin Flakes
- 250 g haloumi cheese grated
- 30 g parmesan grated
- 250 g sweet potato grated
- ½ onion large - finely diced
- 120 g corn kernels
- 50 g plain flour or Gluten-free plain flour
- 1 egg lightly whisked
- 4 cloves garlic crushed
- 60 ml milk or water or stock
- 25 ml oil
- Salt and pepper to taste
- parsley Handful
- Oil Oil of choice for shallow frying
Instructions
- Mix all ingredients until well combined. Let stand for 5 minutes.
- Once rested, with moist hands, form the mixture into patties/ burgers of desired size. We recommend creating 80g portions and making them as thin as possible to allow for even cooking.
- Shallow fry until golden. Ensure your oil is very hot before adding patties.
- Alternatively you can lightly spray patties with oil and bake in a low to moderate oven for about 30 mins for an even healthier mini burger!

Serving suggestion:
Serve with plain Greek yoghurt, sauce or relish of your choice.
