Ingredients

Lupin shortbread base

  • 50 g plain flour โ…“ cup - GF plain flour if required
  • 40 g lupin flour โ…“ cup
  • 30 g icing sugar ยผ cup
  • Pinch salt
  • 70 g butter melted
  • ยฝ teaspoon vanilla extract

Cheesecake filling

  • 250 g cream cheese softened
  • 125 g Greek yoghurt ยฝ cup - best with thick yoghurt
  • 70 g caster sugar โ…“ cup
  • 1 egg large
  • 1 lemon Finely grated zest
  • 1 tablespoon lemon juice 20ml
  • 1 teaspoon vanilla extract

To decorate

  • Fresh berries
  • icing sugar optional - Light dusting

Instructions

  • Preheat the oven to 170ยฐC conventional or 150ยฐC fan-forced. Line a 12-hole muffin tin with paper cases.
  • Combine the plain flour, lupin flour, icing sugar and salt. Add the melted butter and vanilla, then mix until a soft, crumbly dough forms.
  • Divide the mixture evenly among the paper casesโ€”approximately one heaped tablespoon in each. Press down firmly to create an even base.
  • Bake for 10 - 15 minutes, until lightly golden around the edges. Once baked remove from oven & reduce the temperature to 160ยฐC conventional or 140ยฐC fan-forced.
  • Beat the cream cheese and caster sugar until smooth. Add the yoghurt, egg, lemon zest, lemon juice and vanilla, mixing only until combined. Divide the filling evenly among the cases.
  • Bake for 15โ€“18 minutes, until the edges are set but the centres still have a slight wobble. Turn off the oven, leave the door slightly open and allow the cheesecakes to rest inside for 10 minutes.
  • Cool completely, then refrigerate for at least 2 hours before decorating with berries and lemon zest.

Notes

Cookโ€™s tip: Donโ€™t overbeat the filling after adding the egg, as incorporating too much air can cause the cheesecakes to rise and crack. The shortbread bases will initially feel slightly soft but will firm beautifully as they cool.
