Ingredients
  

Salad

  • 60 g lupin flakes
  • ½ cup boiling water
  • 130 g cherry tomatoes diced
  • 80 g cucumber diced
  • 50 g celery diced
  • 1 medium red apple diced
  • 40 g sultanas
  • 25 g sunflower seeds
  • 250 g cooked chicken breast diced
  • Salt and pepper to taste
  • ¼ cup fresh flat-leaf parsley chopped

Dressing

  • 4 tbsp high-protein plain yogurt
  • 2 tsp Dijon mustard
  • 2 tsp honey
  • Salt and pepper to taste

Instructions
 

  • In a microwave-safe jug, add the lupin flakes and boiling water. Microwave on high for 3 minutes. Remove and fluff with a fork. Set aside to cool slightly.
  • In a large bowl, combine the cherry tomatoes, cucumber, celery, apple, sultanas, sunflower seeds, chicken, and parsley. Add the cooked lupin flakes.
  • In a small bowl, whisk together the yogurt, Dijon mustard, honey, salt, and pepper until smooth. Pour the dressing over the salad and toss gently until well coated.

Notes

💡 Tip:
This salad keeps well in the fridge for up to 2 -3 days. Add the dressing just before serving for the freshest crunch.
