Lupin Dip

  • 1 cup Lupin Flakes
  • 2 garlic (small cloves crushed )
  • 20 ml tahini paste (dehulled )
  • 20 ml wine vinegar
  • 1 tsp lemon juice
  • 60 ml vegetable oil
  • ½ tsp vegetable stock
  • ½ tsp salt
  • 10 ml olive oil (for drizzling)
  1. Add Lupin Flakes to 3 cups of hot water and bring to boil. Boil for 3 minutes then strain.
  2. Place Lupin Flakes and all other ingredients in food processor and blend until smooth.
  3. You may need to add up to a ½ cup of water to achieve a creamy consistency.
  4. Dip will thicken on standing. If you you feel it is too thick, just add extra water and blend.

Serve:
Drizzled olive oil and sprinkled with paprika.
