Lupin Dip
- 1 cup Lupin Flakes
- 2 garlic (small cloves crushed )
- 20 ml tahini paste (dehulled )
- 20 ml wine vinegar
- 1 tsp lemon juice
- 60 ml vegetable oil
- ½ tsp vegetable stock
- ½ tsp salt
- 10 ml olive oil (for drizzling)
- Add Lupin Flakes to 3 cups of hot water and bring to boil. Boil for 3 minutes then strain.
- Place Lupin Flakes and all other ingredients in food processor and blend until smooth.
- You may need to add up to a ½ cup of water to achieve a creamy consistency.
- Dip will thicken on standing. If you you feel it is too thick, just add extra water and blend.
Serve:
Drizzled olive oil and sprinkled with paprika.
