Ingredients

  • 150 g soft Medjool dates pitted (about ¾ cup firmly packed) *see notes
  • ½ cup 60 g lupin flakes
  • ¼ cup 60 g smooth cashew butter
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon fine sea salt
  • 1/4 cup Desiccated coconut for rolling (optional)

Instructions

  • Place lupin flakes, softened dates (*see notes) cashew butter, maple syrup, vanilla and salt into a food processor and blitz until the mixture clumps together and holds when pressed between your fingers.
  • Roll into 12 balls - Roughly 1 tablespoon of mixture per ball, depending on how tightly it’s packed. For even sizing, you can weigh the mixture and divide by 15.
  • Leave balls plain or lightly coat in coconut.
  • Refrigerate for 30 minutes to firm up.

Notes

• Soak dates in hot kettle water for 5 minutes, then drain well before using.
• Cashew butter gives a lovely mild, buttery flavour. Smooth peanut butter also works, but the flavour will be more peanut caramel.
• Keep in an airtight container in the fridge for up to 1 week, or freeze for up to 3 months.
