Start by preheating the griddle to 375-degrees. Place all ingredients in a blender and blend for about a minute. Then, scrape down the bottom and sides and blend for a few more seconds. Next, turn the griddle down to 350 degrees. If needed, use butter to grease the cooking surface. Pour batter onto the griddle to make 3-4 inch wide pancakes and cook for 3-4 minutes per side. INGREDIENTS
- 5 tablespoons butter, softened
- 3/4 cup granulated keto sweetener
- 4 oz. cream cheese
- 4 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon baking powder
- ½ cup Australian Sweet Lupin flour
- 1 cup almond flour
DIRECTIONS
Preheat oven to 350 degrees. Grease a loaf pan with butter. In a large mixing bowl, add the softened butter, sweetener, and softened cream cheese and mix them until you get a smooth texture. Then, crack the eggs into the bowl and add lemon juice, lemon zest, and vanilla extract. With a hand mixer, blend the mixture until smooth. In another bowl, mix the baking powder with almond flour. Then, slowly add that mixture to the cake batter, and mix them thoroughly. Next, pour batter into the loaf pan and spread evenly. Finally, place the pan into the oven and bake for about 60 minutes. You can use a toothpick to check if it’s cooked through before you cool the cake and slice to serve.
