Serves 8 on a mezze platter
1 cup Lupin Flakes
2 small cloves crushed garlic
20ml dehulled tahini paste
20ml wine vinegar
1 tsp lemon juice
60ml vegetable oil
½ tsp vegetable stock
½ tsp salt
10ml olive oil (for drizzling)
- Add Lupin Flakes to 3 cups of hot water and bring to boil. Boil for 3 minutes then strain.
- Place Lupin Flakes and all other ingredients in food processor and blend until smooth.
- You may need to add up to a ½ cup of water to achieve a creamy consistency.
Dip will thicken on standing. If you you feel it is too thick, just add extra water and blend.
Drizzled olive oil and sprinkled with paprika.
